Chol.Restr. Diet (Pritikin)

DESCRIPTION

This diet is intended for those who have concern about elevated blood cholesterol or triglyceride levels, or problems related to adult-onset diabetes mellitus.

This diet is very restricted in both total fats and cholesterol. The Standard American Diet has 42% of the calories as fat and more than 400 mg of cholesterol, whereas this diet is 10% fat and less than 200 mg of cholesterol. This diet is very high in complex carbohydrate (75% of calories) and natural fibers.

This diet could result in essential fatty acid deficiency (linoleic acid) if it is sustained after a person has lost most of their body fat stores. Symptoms of this include dry skin, eczematous skin problems, dry hair and brittle nails. This diet will provide adequate levels of the vitamins and minerals if unprocessed natural carbohydrate sources are used. Problem nutrients include vitamins A and B-12, and the minerals iron and zinc.

SAMPLE MENU FOR ONE DAY

Breakfast

  • 1/2 grapefruit
  • 1/2 cup cooked oatmeal
  • 1 slice whole wheat bread (toasted) dry
  • 1/4 cup egg substitute
  • 1 cup skim milk
  • Hot, non-caloric beverage

Lunch

  • 1 cup fat-free soup, vegetable
  • 3 ounces sliced turkey breast

2 slices whole wheat bread, mustard, sliced lettuce and tomato for sandwich

  • 1/3 cup cooked corn
  • 1 apple
  • 1 cup steamed zucchini

Dinner

  • 1/2 cup tomato juice
  • 1 cup brown rice
  • 1 cup salad: romaine or Boston lettuce, sliced carrots, cucumbers, mushrooms, green pepper, celery
  • 2 teaspoons oil and vinegar dressing
  • 1 slice whole wheat bread
  • 3 ounces broiled cod
  • 1/2 cup steamed broccoli
  • 1 cup skim milk
  • Hot, non-caloric beverage
  • 4 apricot halves (non-sweetened)

Nutrient Content

Calories: 1410 Protein: 14%

Carbohydrates: 74% Fat: 12%

Cholesterol: 130 mg Fiber: 17 g

FOOD EXCHANGE MENU

Bread and Cereal Exchange List:

4 or more servings per day

Recommended:

The following are recommended as long as they are not made with whole milk, egg yolk, cream, butter or coconut:

  • Whole wheat bread
  • Cereals
  • White bread (enriched)
  • Quick-breads
  • Waffles
  • Gelatin
  • Green peas
  • Grains
  • Crackers
  • Pastas
  • Beans
  • Pancakes
  • Potatoes
  • Lentils

Avoid:

  • All breads not noted above

Fat Exchange List:

1 tablespoon per day

Recommended:

Polyunsaturated vegetable oils such as:

  • Safflower oil
  • Soybean oil
  • Corn oil

Avoid:

All fats which are not recommended such as:

  • Lard
  • Ordinary margarine
  • Bacon fat
  • Butter
  • Cream

Fruit Exchange List:

2 or more servings per day

Recommended: All

Avoid: None

Meat and Meat Substitute Exchange List:

4 to 5 servings per day:

Recommended:

  • Lean meats without skin
  • Poultry without skin

Lean fish such as:

  • Cod
  • Haddock
  • Flounder
  • Perch

Cheese made from skim milk, such as:

  • Cottage cheese (2% fat)
  • Ricotta
  • Monterey jack
  • Mozzarella

Avoid:

Fatty meat, fish and cheese such as:

  • Luncheon meats
  • Salmon
  • Cream cheese
  • Organ meats
  • Sardines

Milk Exchange List:

2 or more servings per day

Recommended:

  • Skim milk
  • Buttermilk made from skim milk
  • Evaporated skim milk
  • Yogurt made from skim milk

Avoid:

  • All whole milk products

Vegetable Exchange Lists:

2 or more servings per day

Recommended: All

Avoid:

None, unless prepared with butter or milk products

Miscellaneous Exchange List:

Recommended:

Fat-free soups made with recommended ingredients

Avoid:

  • Soups made with whole milk or cream
  • Commercially prepared popcorn

Note: Include six to eight cups of fluids, such as water, per day.
